Broccoli Pie

2 packages (10 oz each) frozen chopped broccoli
3 cups shredded cheddar cheese (12 oz)
2/3 cups chopped onion
1 1/3 cups milk
3 eggs
¾ cup buttermilk baking mix
¾ teaspoon salt
¾ teaspoon pepper

Heat oven to 400. Grease pie plate, 10×1 ½ inches. Rinse broccoli under running cold water to thaw; drain thoroughly. Mix broccoli, 2 cups of cheese and the onion in the plate. Beat milk, eggs, baking mix, salt, pepper, until smooth, 15 seconds in a blender on high or 1 minute by hand. Pour into pie plate. Bake about 25 to 35 minutes. Top with remaining cheese. Bake until cheese is melted about 1 to 2 minutes longer. Let stand about 5 minutes. Garnish with tomato slices if desired. Makes 6 servings 405 calories per serving.

Cold Crab Dip

8 oz whipped cream cheese
1/2 small onion (finely chopped)
glove of garlic (pressed)
1 tbsp milk

Combine the ingredients above in bowl. Mix thoroughly and spread in the bottom of serving dish.

medium tomato (seeded and chopped)
1/2 small bell pepper (chopped) I prefer yellow or orange
handful of parsley (finely chopped)
juice from 1/2 lemon, add more if you desire
1/8 teaspoon salt

Combine above ingredients and sprinkle over cream cheese mixture.

4 oz. flaked crab meat (Bedford Shop and Save has the best I’ve found near their deli section)

Sprinkle on top of entire dish. Chill.

Serve with Wheat Thins, or any cracker/chip you prefer.
